Fast & Easy Macaroni

(Serves 4)

  • 2 cups elbow macaroni
  • 2 tablespoons low fat butter or margarine
  • 1 1/2 cups Gustafson 1% Low Fat Milk
  • 1/2 teaspoon ground nutmeg
  • Pinch salt and pepper to taste
  • 8 ounces processed low fat American cheese
  • 1/2 cup bread crumbs (optional)
  • 1/4 cup parmesan cheese (optional)
  • 2 tablespoons chopped parsley (optional)


Cook macaroni until done and set aside. In a medium saucepan over medium heat, melt low fat butter or margarine. Add milk, nutmeg, salt and pepper and stir constantly until milk mixture starts to boil. Add cheese and allow it to melt. Add cooked macaroni and stir until well combined. Enjoy hot as a snack or as a side dish. Another option is to pour macaroni and cheese into a buttered baking dish. Top with bread crumbs, parmesan cheese and parsley. Bake at 350 degrees for 25 minutes.
